Ingredients
Aubergine skewers
- 8 baby aubergines
- 8 cherry tomatoes
- 1 pack mozzarella bites
For the dressing
- 1 table spoon Maille wholegrain mustard
- 50ml Maille white wine vinegar
- 75ml olive oil
Preparation
- Wash the vegetables thoroughly, cut the aubergines in 2 cm thick slices
- Heat a griddling pan and grill the aubergine, grill the cherry tomatoes slightly or assemble the skewers placing an aubergine slice, a cherry tomato and a mozzarella bite alternatively and use a blow torch to colour whilst on the skewer
- Make the vinaigrette by shaking in a vinaigrette shaker the wholegrain mustard, vinegar and the olive oil. Drizzle over the skewers and serve.
