Maille Thai soup
Ingredients
- 1 tablespoon vegetable oil
- 2 tablespoons grated fresh ginger
- 2 teaspoons, Maille mango and Thai spices mustard
- 2 chicken breasts sliced
- 500ml coconut milk
- 2 tablespoons fresh lime juice
- 1/4 cup chopped fresh cilantro
- Red or green chillies to taste
- Fresh basil sprigs
Preparation
- place oil in a deep pan and cook the chicken until it has a nice gold colour, add the ginger, coconut milk and chillies and simmer for 15 mins, add the mustard and stir to incorporate, remove from the heat add the coriander and lime and serve in 4 individual bowls and decorate with Thai basil
Tip
serve with extra herbs on the side for each to mix into their soup.
