  • 1 red onion thinly sliced
  • 1/2 teaspoon ground cumin
  • 1 1/2 cup canned chopped tomatoes
  • 1 tablespoon Maille Wholegrain Mustard
  • 4 eggs
  • 2 tablespoons chopped coriander
  • 2 cups cooked drained green lentils


  1. Fry the onion in a deep oven proof frying pan on medium heat with a drop of vegetable oil for 2 minutes
  2. Add the coriander and cumin and put the heat on a low setting
  3. Add the chopped tomatoes, drained lentils and Maille Wholegrain Mustard and simmer for about 10 minutes.
  4. make 4 shallow wells in the sauce and crack an egg into each well
  5. Bake in a preheated oven at 160 degrees C. for about 10-12 minutes until the eggs are cooked but still soft in the inside

Hints and Comments

You can sprinkle more fresh coriander on top before serving
