Maille Shakshuka

Ingredients
- 1 red onion thinly sliced
- 1/2 teaspoon ground cumin
- 1 1/2 cup canned chopped tomatoes
- 1 tablespoon Maille Wholegrain Mustard
- 4 eggs
- 2 tablespoons chopped coriander
- 2 cups cooked drained green lentils
Preparation
- Fry the onion in a deep oven proof frying pan on medium heat with a drop of vegetable oil for 2 minutes
- Add the coriander and cumin and put the heat on a low setting
- Add the chopped tomatoes, drained lentils and Maille Wholegrain Mustard and simmer for about 10 minutes.
- make 4 shallow wells in the sauce and crack an egg into each well
- Bake in a preheated oven at 160 degrees C. for about 10-12 minutes until the eggs are cooked but still soft in the inside
Hints and Comments
You can sprinkle more fresh coriander on top before serving
